Plant-Based Posers: Easy Brownie Cookies

This is a yoga and wellness blog, so I'm sure you're wondering whether this recipe will be some type of healthy spin on a brownie-cookie hybrid, but I'm here to tell you...absolutely not. We're in the midst of a global pandemic, the least we can do is enjoy some comfort food! Although, as with any of the recipes I share, feel free to tailor with different or cleaner ingredients if that floats your boat instead.

The recipe I'm including here uses many common pantry staples, because again...pandemic. Hopefully you have most, if not all, of these things lying around. Luckily when my sweet tooth kicked in, I was able to concoct several batches of these bad boys, and let me tell you...not once did they survive a full 24-hours in our household. They are deadly tasty.

So here we go...get ready to bake the easiest, fudgiest cookies you've ever eaten, with no hassle and in 20 minutes or less.

((This recipe bakes 18 medium sized cookies))

❤Ingredients
1 cup flour
2/3 cup cocoa powder (unsweetened)
3/4 cup white sugar
1/2 cup veg oil of choice (I like coconut oil best, but totally up to you! You can even sub melted & cooled vegan butter)+ enough to grease your cookie sheet
1 tbs vanilla extract
2 tbs maple syrup
1 tsp salt
1/4 tsp baking soda
1 tbs plant-based milk of choice 

❤Instructions
1. Preheat oven to 350 degrees and lightly coat cookie sheet(s) with a small amount of oil or vegan butter
2. In a medium mixing bowl, combine the sugar, vanilla extract, oil, milk, and maple syrup. Whip with a fork until incorporated into a thick mixture (think wet sand, my friends).
3. In a separate bowl, combine sifted flour and cocoa powder, along with salt and baking soda. Mix together, then add to same bowl with wet mixture. Using clean hands, knead everything together into a cookie dough, then shape into small cookie balls. Press each cookie down with the back side of a fork to flatten a bit before baking.
4. Bake cookies for 8-10 minutes, then allow to cool completely on a wire rack before enjoying.

You can store these cookies in any plastic or glass container with a lid and they'll stay nice and fresh for several days, but I promise they probably won't last long enough to prove it!
